Mini Cast-Iron Apple Pie (Vegan and Mountain-Girl Style)

I love eating things that are miniature.  They are so much fun, and you can eat the whole thing without feeling too guilty.
 I also made a 9" pie.  I think I could have eaten the whole thing.  The neighbors really liked it as well. :)  
 For this pie you will need:
 Cast-iron pan
Ten apples (different varieties)
two lemons
1 1/4 cups brown sugar
1/8 cups flax meal
 1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
two pinches of salt
2 tablespoons Earth Balance (top of pie)
3 tablespoons sugar (top of pie crust)
Pie crust (I used Trader Joe's brand)  

 About ten apples that are sliced, peeled and cored.  
 
I have a handy machine that slices, peels, and cores the apples for me.  It was about $15 at the grocery store and is so worth the time it has saved me.  
Juice two lemons
Zest one lemon
Mix the apples, lemon juice, and lemon zest together.
In a separate bowl mix together, 1 1/4 cup brown sugar, 1/8 cup flax meal, 1 1/2 tsp. cinnamon, 1/2 tsp. nutmeg,  two pinches of salt.   Stir in the brown sugar mixture with the apples.
Make your pie crust, or do it the easy way like me, and buy your pie crust at the store.  I got mine at Trader Joe's in the freezer section. 
 Cut out pieces of crust that's slightly bigger than the size of the pan.  Lay the cut crust in your greased cast-iron muffin pan. 

 If your making the larger pie, grease and flour the cast-iron and then carefully lay down your crust.

 Add the apple mixture and a small dab of earth balance.  
You can top your mini pies with crust or leave it open.  

 Sprinkle sugar over the top of the pie crust.
Bake in the oven at 400 degrees F for 15 minutes (40 min. for 9" pie), then lower the temp to 325 degrees F for about 30 minutes (15 min. for the 9" pie), or until the crust is golden brown. 
 Let cool and make sure to share with your neighbors.  They will love you for this.  :)

  2. Thank you, Kari!! The pan is from Intermountain Farmer's Association (IFA) and I got it a while ago.
    I don't know if they still make them, but the brand is:
    SANTE Cookware
    It's a Cast Iron Cupcake Fun XL Topper Pan; Model CIGT-4C.
    E-bay is the only place I found online that sells this, but they have a lot of other muffin cast iron pans online.
