I love to cook on Sunday. Cooking keeps me sane and I love the creativity cooking requires. I made up this nummy recipe last weekend. The flavors in these vegan sloppy joes work so well together, and tastes better than sloppy joes made with real meat.
What you will need:
1/4 head cauliflower shredded
2 carrots shredded
1 can Aduki beans
1 chopped onion
1/2 cup mushrooms diced
2 cloves garlic
2 T. catchup
1 T. Mustard
1 T. Apple Cider Vinegar (ACV)
3 T. brown sugar
1 tomato chopped
Salt and pepper to taste
Shred the cauliflower and carrots into a medium sized bowl. Add the Aduki beans, mushrooms, garlic, catchup, mustard, ACV, brown sugar, and salt and pepper.
Mix these ingredients together, then cover and place in the fridge for about one hour. I put the mix in the fridge to give the ingredients time for the flavors to come out.
After this has sat for one hour, dice one onion and two garlic cloves. Throw the onion and garlic in a cast-iron pan and cook on medium heat until caramelized.
Add the sloppy joe mix, and cook for about 10-15 minutes, stirring occasionally.
Keep cooking until the veggies have fully cooked. Scoop the mix into a toasted bun. I made Trader Joe's tater tots to go on the side.
