Chocolate Orange Vegan Cupcakes

Chocolate Orange Vegan Cupcakes
These are so delicious!!

This is a slightly modified version.   


What you will need:

For the Cupcake Batter
3/4 cup Silk light soy milk
1/4 cup orange juice
1 teaspoon apple cider vinegar
1/3 cup canola oil
2/3 cup sugar
1 teaspoon orange zest
1 cup flour
1/3 cup cocoa powder
2/3 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt 

For The Frosting
1/2 cup Earth Balance butter substitute
1 1/2 cup  powdered sugar, plus more if needed to thicken
1/2 tablespoon orange juice 
1 teaspoon orange zest, optional
1/4 cup cocoa powder 

Cupcake batter:
Add soy milk, orange juice, and apple cider vinegar.  Wisk these ingredients together and set aside until the mixture curdles.  
 Prepare the orange zest.

Add canola oil, sugar, and orange zest.  Mix.
 Add flour, cocoa powder, baking soda, baking powder, and salt.  
Mix all ingredients until the batter is smooth.
Scoop batter into a cupcake tin and place in an oven heated to 350 degrees Fahrenheit for 22-24 minutes, or until no longer doughy in the middle.  Let the cupcakes cool while you make the frosting. 
Frosting:
In a separate bowl mix butter until fluffy, add the rest of the ingredients and mix.  Add more powdered sugar until desired thickness of frosting.  
Frost the cooled cupcake.
Enjoy!!  You will want to have more than one.
